Barbecued chicken is a popular
cuisine through out Thailand, from the mobile roadside stalls to
shopping malls and beaches.
Ingredients
- Chicken (cut into 8-10 pieces)
- About 1.5 kg/3 lbs
- Lime (cut into slices to
garnish)- 2 pieces
- red chili (sliced to garnish)

For the Marinade
- Lemon grass (chopped) - 2
stalks
- Fresh root ginger - 2.5 cm/ 1
inch
- Garlic - 6 cloves
- shallots - 4 pieces
- Coriander roots - 1 bundle
- Sugar - 15 ml/ 1 tablespoon
- Coconut milk - 120 ml/4 fl oz
- Fish sauce - 30 ml/
2tablespoons
- Soy sauce - 30 ml/ 2
tablespoon
Method
- To prepare the marinade, put
all the marinade ingredients into a food processor or blender to
blend until fine smooth.
- Spread the marinades onto the
chicken pieces and marinade for at least 4 hours. It is better
to marinade over night.
- Barbecue the chicken over
glowing charcoal, or place on a rack over a baking tray and bake
until chicken is cooked. Turn the pieces occasionally and brush
with marinade.
- Garnish with lime wedges and
sliced chili. Serves 4-6.
