Thai Stewed Pig's Trotter Recipe

This Thai dish is also popularly known as "Kha Mu"

Ingredients

  • Pig's trotter (chopped into 2 big chunks) - 1 kilograms
  • Garlic (whole) - 5 cloves
  • Galangal - 3 inches
  • Coriander (chopped) - 3 stalks
  • Dark soy sauce - 3 tablespoons
  • Light soy sauce - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Star anise - 2 pieces
  • Sugar and salt to taste
  • Water

Method

  • Grill the pig's trotter until the skin turn crispy then transfer into a deep pot.
  • Add garlic, galangal, star anise, dark soy sauce, fish sauce and sufficient water to cover all ingredients then bring to boil. turn to low heat and simmer for 45 minutes.
  • Add seasoning to taste, check whether if meat is tender enough. Stew a little longer if needed until pork really turn soft and gravy thicken.
  • Dish out and garnish with chopped coriander when serve.
