This Thai dish is also popularly
known as "Kha Mu"
Ingredients
- Pig's trotter (chopped into 2
big chunks) - 1 kilograms
- Garlic (whole) - 5 cloves
- Galangal - 3 inches
- Coriander (chopped) - 3 stalks
- Dark soy sauce - 3 tablespoons
- Light soy sauce - 3
tablespoons
- Fish sauce - 2 tablespoons
- Star anise - 2 pieces
- Sugar and salt to taste
- Water
Method
- Grill the pig's trotter until
the skin turn crispy then transfer into a deep pot.
- Add garlic, galangal, star
anise, dark soy sauce, fish sauce and sufficient water to cover
all ingredients then bring to boil. turn to low heat and simmer
for 45 minutes.
- Add seasoning to taste, check
whether if meat is tender enough. Stew a little longer if needed
until pork really turn soft and gravy thicken.
- Dish out and garnish with
chopped coriander when serve.
