Thai Pork Porridge Recipe

Ingredients

  • Rice - 1 cup
  • Stock - 8 cups
  • Dried cutter fish - ¼ piece
  • Minced pork - 300 grams
  • Ginger (shredded) -1 tablespoon
  • Spring onions (chopped) - 2 stalks
  • Coriander (chopped) - 2 stalks
  • Sesame oil - few drops
  • Cornstarch - 1 teaspoon
  • Light soy sauce  and pepper to taste

Method

  • Mix minced pork with light soy sauce, sesame oil, cornstarch, pepper and salt and marinate for 30 minutes. 
  • Mix rice, cutter fish and stock in a pot then bring to a boil, turn to low heat and simmer until rice is soft and open up.
  • When porridge is almost cooked, add minced pork with a teaspoon scoop and bring to boil again. Cook for 2 minutes and turn off heal. Add seasoning to taste and garnish with chopped spring onions and coriander.
