Thai Pomelo Salad Recipe (Yum Som-O)

     Ingredients
  • Pomelo - 1 kilograms
  • Shallot (chopped) - 30 grams
  • Garlic (chopped) - 40 grams
  • Coriander leaves (chopped)  - 10 grams
  • Red chili padi (chopped) - 10 grams
  • Lime juice - 2 teaspoons
  • Soya sauce - 2 teaspoons
  • Palm sugar - 30 ml
  • Peanuts (roasted) - 30 grams
  • Salt and pepper to taste

     Method

  • Cut pomelo into small cubes then mix in chopped shallots, garlic and chilies in a big bowl.
  • Add lime juice, palm sugar, chopped coriander leaves, roasted peanuts, soy sauce and season with salt and pepper.
  • Toss and mix well . Serve 8
