This is actually a mix Stir Fried
of vegetables and fat pork and similar to "Pad Ped Mu" in Thai
Ingredients
- Pork (belly part, diced) - 400
grams
- Long beans (sectioned) - 200
grams
- Red pepper (sliced)- 1 piece
- Curry paste - 3 tablespoons
- Thai chili oil 1 tablespoon
- Fish sauce - 2 tablespoons
- Garlic (chopped) - 2 cloves
- Sugar - 1 tablespoon
- Small Chili - 5 pieces
- pepper - 1 teaspoon
Method
- Heat 1 tablespoon of cooking
oil in a deep frying pan, add diced pork, stir fry until meat
turn brown and fat melted and crispy.
- Add curry paste and sauté to
blend in the flavor and become aromatic.
- Add in all other ingredients
and stir-fry to mix well, sprinkle with litter bit of water if
dish is too dry.
- Continue to fry for about 3
minutes until dish is cooked through. Dish up and serve with
rice.
