The quick and easy chicken dish is
an excellent introduction to Thai cuisine. Deep frying the basil
adds another dimension to this dish. Thai basil, which is sometimes
known as Holy basil, has a unique, pungent flavor that is both spicy
and sharp. The dull leaves have serrated edges.
Ingredients
- vegetable oil - 45ml/3 tbsp
- garlic - 4 cloves, sliced
- red chilies - 2-4, seeded and
chopped
- chicken - 450g/1 lb, cut into
bite-sized pieces
- fish sauce - 30-45ml/2-3 tbsp
- soy sauce - 10ml/2 tsp
- sugar - 5ml/2 tsp
- Thai basil leaves - 10-12
- red chilies - 2, finely sliced,
to garnish
- Thai basil leaves - 20, deep
fried (optional)
Method
- Heat the oil in a wok or large
frying pan and swirl if around.
- Add the garlic and chilies and
stir-fry until golden.
- Add the chicken and stir-fry
until it changes color.
- Season with the fish sauce, soy
sauce and sugar. Continue to stir-fry for 3-4 minutes or until the
chicken is cooked.
- Stir in the fresh Thai basil
leaves. Garnish with sliced chilies and deep fried basil, if
using. Serves 4-6.
