Ingredients
Coconut - 1 piece
Black Skin Chicken - 1 bird
Black beans - 5 oz
Lean pork - 6 oz
Ginger - 2 slices
Red Dates (remove seed) - 4 pieces
Method
Cut coconut flesh into small pieces.
Clean and scald chicken and pork then rinse well.
Bring suitable amount of water into boil then add all ingredients in and continue to cook with low heat for another 3 hours.
Season with salt and serve hot.
Note: For convenience, slow cooker or pressure cooker can also be used.
