Ingredients
- Big prawns - 500 grams
- Bread (sliced and remove
crusts) - 4 pieces
- Hard boil egg yolk (crushed) -
2 eggs
- Egg - 1 piece
- Sliced ham (dice ½ inch
square) - 1 piece
- Corn starch - 2 tablespoons
- Shallot (finely chopped) - 1
- Cooking oil - for deep-fry
- Salt and pepper to taste
Method
- Clean and remove shell from
prawns, keep tail intact. Cut open back down and remove vein,
flatten the prawn slightly.
- Coat the prawns with mixture
of cornstarch, salt, pepper, beaten egg.
- Cut bread into half to fit the
size of prawn. Place prawn onto bread, then add chopped
shallots, egg yolk and dice ham over the prawn and bread. Apply
cornstarch mixture to make topping adhere.
- Heat up cooking oil in deep
sauce pan and gently ease the prawns in and deep-fry 2 or 3
pieces at a time with medium heat.
- Deep fry for 2 minutes until
bread turn golden brown then drain well to serve.
