Ingredients
- solens - 900g
- fermented black beans - ½ tbsp
- chive shoots - 150g
- red chili - 1
- grated garlic - 1 tsp
- wine - 2 tsp
- grated ginger - ½ tsp
Sauce
- water - 1½ tbsp
- pepper and salt - to taste
- corn starch
- light soy sauce
- sesame oil
Method
- Soak the solens in salted
water for an hour and wash. Put it in boiling water until it
open its shells. Picked out the flesh and discard the shells.
- Wash, cut and trim the chive
shoots, seeded and shred the red chili, wash the black beans and
dry it.
- Heat 1 tbsp oil and stir fry
the chive shoots, set aside.
- Heat 2 tbsp oil and stir fry
the red chili, black beans, ginger, garlic, and the solens.
- Add in the wine, chive shoots
and the ingredients for the sauce. Mix well and serve.
