Stir-fried Solens Recipe

Ingredients

  • solens - 900g
  • fermented black beans - ½ tbsp
  • chive shoots - 150g
  • red chili - 1
  • grated garlic - 1 tsp
  • wine - 2 tsp
  • grated ginger - ½ tsp

Sauce

  • water - 1½ tbsp
  • pepper and salt - to taste
  • corn starch
  • light soy sauce
  • sesame oil

Method

  • Soak the solens in salted water for an hour and wash. Put it in boiling water until it open its shells. Picked out the flesh and discard the shells.
  • Wash, cut and trim the chive shoots, seeded and shred the red chili, wash the black beans and dry it.
  • Heat 1 tbsp oil and stir fry the chive shoots, set aside.
  • Heat 2 tbsp oil and stir fry the red chili, black beans, ginger, garlic, and the solens.
  • Add in the wine, chive shoots and the ingredients for the sauce. Mix well and serve.
