Stir-fried Green Wrasse with Kailan Recipe

Ingredients

  • green wrasse fillet - 375g
  • kailan - 300g
  • oil - 1 tbsp
  • spring onions - 2 stalks
  • wine - 1 tsp
  • ginger - 3 slices
  • grated garlic - ½ tsp
  • corn starch - 1 tsp
  • white wine - ½ tsp
  • egg white - ½
  • salt and sugar - ¼ tsp each
  • pepper
  • ginger juice - ½ tsp

Sauce

  • water - 1 tbsp
  • corn starch - 1 tsp
  • light soy sauce - ½ tsp
  • sesame oil
  • sugar and salt - ¼ tsp

Method

  • Clean and cut the kailan. Stir-fried and add the wine, salt and sugar. Set aside.
  • Wash the fillet and pat it dry. Cut into pieces and marinate with salt, sugar, ginger juice, white wine, pepper, egg white and corn starch.
  • Add 1 tbsp oil into the mixture and deep-fried in warm oil.
  • Heat 1 tbsp oil and stir fry the ginger, spring onion, and garlic until fragrant.
  • Pour in the fillet, add the wine, kailan, and all ingredients for the sauce.
  • Mix well and serve.
