Ingredients
- green wrasse fillet - 375g
- kailan - 300g
- oil - 1 tbsp
- spring onions - 2 stalks
- wine - 1 tsp
- ginger - 3 slices
- grated garlic - ½ tsp
- corn starch - 1 tsp
- white wine - ½ tsp
- egg white - ½
- salt and sugar - ¼ tsp each
- pepper
- ginger juice - ½ tsp
Sauce
- water - 1 tbsp
- corn starch - 1 tsp
- light soy sauce - ½ tsp
- sesame oil
- sugar and salt - ¼ tsp
Method
- Clean and cut the kailan.
Stir-fried and add the wine, salt and sugar. Set aside.
- Wash the fillet and pat it
dry. Cut into pieces and marinate with salt, sugar, ginger
juice, white wine, pepper, egg white and corn starch.
- Add 1 tbsp oil into the
mixture and deep-fried in warm oil.
- Heat 1 tbsp oil and stir fry
the ginger, spring onion, and garlic until fragrant.
- Pour in the fillet, add the
wine, kailan, and all ingredients for the sauce.
- Mix well and serve.
