Stir-fried Fillet with Honey Peas Recipe

Ingredients

  • garoupa fillet - 225g
  • wine - 2 tsp
  • ginger - few slices
  • carrot - few slices
  • honey peas - 225g
  • grated garlic - ½ tsp
  • water - 2 tbsp
  • corn starch - ½ tsp
  • salt and sugar
  • light soy sauce - ½ tsp
  • sesame oil

Marinate for fillet

  • oil - 1 tbsp
  • egg white - 1 tbsp
  • salt and pepper
  • corn starch - ¾ tsp
  • wine - ½ tsp
  • sesame oil

Method

  • Wash and pull the strings off the honey peas.
  • Stir fry the honey peas with oil and salt until half cooked.
  • Wash and pat dry the fillet, cut into thick strips.
  • Marinate for 20 minutes and deep fry in warm oil.
  • Heat 1 tbsp oil and fry the garlic, ginger, and carrot. Pour in the fillet, add in the wine, honey peas, salt, sugar, light soy sauce, corn starch, sesame oil, and water.
  • Mix well and serve.
