Ingredients
- Chinese parsley - 1
- lean pork - 38g
- grey mullet - 1
- dried black mushrooms - 2
- spring onion - 2 stalks
- salted lemon - ¾
- dried tangerine peel - ¼
- oil - 2 tsp
- soy bean paste - 1 tsp
- sugar - ¾ tsp
Method
- Wash and scale the fish, pat
dry.
- Soak the mushrooms warm water
until tender, shred both the mushrooms and lean pork, mix in
light soy sauce, corn starch and oil.
- Soak the tangerine peel until
tender, shred the spring onion and tangerine, trim the Chinese
parsley.
- Mash the salted lemon, stir in
sugar, soy bean paste, and 2 tsp oil. Rub inside and outside of
the fish with the mixture.
- Add the lean pork, tangerine
peel, and mushrooms and steam 9-10 minutes.
- Place the fish on a dish and
sprinkle with Chinese parsley and spring onion. Pour 2 tbsp of
hot oil on the fish and add 2 tbsp of light soy sauce. Serve.
