Ingredient
- red-spotted garupa - 1
- spring onion - 3 tbsp,
shredded
- corn starch - ½ tsp
- oil - 2 tsp
- ginger - ½ tbsp, shredded
- salt and pepper - to taste
Method
- Scale and wash the fish, pat
dry. Rub the fish (inside and outside) with oil, pepper and
salt, sprinkle with some corn starch and add 1 tbsp oil.
- Spread the spring onion on the
plate, place the fish on the plate and add few slices of ginger.
- Steam the fish over high heat
for 12 minutes.
- Discard the ginger, spring
onion and drain the fish. Add new shredded ginger and spring
onion.
- Heat 2 tbsp oil, add in 1 tbsp
of light soy sauce, dark soy sauce, and stock, then some sugar
and pepper to taste.
- Let the sauce boil then pour
on top of the fish. Serve.
