Steamed Fish in Sour Sauce Recipe

Ingredients

  • small yellow fish - 450g
  • red chili - 1
  • spring onion - 2 stalks
  • ginger - 2 slices
  • light soy sauce - ½ tsp
  • salted yellow bean paste - 1 tbsp
  • sugar - 1 tsp
  • sesame oil
  • sour plums - 2, medium size
  • grated garlic - ½ tsp

Method

  • Shred the ginger, trim and dice the spring onion, seed and slice the red chili.
  • Wash and scale the fish then pat it dry with clean cloth.
  • Stir fry the sour plums, bean paste, sugar, light soy sauce, garlic, sesame oil and mix well.
  • Place the fish on a dish and sprinkle the red chili and ginger, pour in ½ tbsp oil and steam for 10 minutes.
  • Before serving, sprinkle with diced spring onion, pour 2 tbsp of hot oil on top.
