Ingredients
- Clams - 800 grams
- Dried prawns (rinsed) - 20 grams
- Ginger (shredded) - 1
tablespoon
- Lemongrass (sliced) - 1 stalk
- Curry leaves - few pieces
- Chili paste - 3 tablespoons
- Onion (chopped) - 1 piece
- Dark soy sauce - 1 teaspoon
- Sugar - 1 teaspoon
- Red chili (shredded) - 1 piece
- Cooking oil - 3 tablespoons

Method
- Wash clams with running water
for few times then soak clam in salt water for 1 hour. This is
to remove the fine sand from the shells. Drain well and set
aside.
- Heat up 3 tablespoons of
cooking oil in pan, add ginger, lemongrass, curry leaves,
chopped onions and stir fried until fragrant.
- Add chili paste, sugar, dark
soy sauce then mix well. Add clams in and stir fry with high
heat for 3 minutes until all shells open.
- Add salt to taste and serve.
