Spicy Stir-Fried Clams Recipe

 

      Ingredients

  • Clams - 800 grams
  • Dried prawns (rinsed) - 20 grams
  • Ginger (shredded) - 1 tablespoon
  • Lemongrass (sliced) - 1 stalk
  • Curry leaves - few pieces
  • Chili paste - 3 tablespoons
  • Onion (chopped) - 1 piece
  • Dark soy sauce - 1 teaspoon
  • Sugar - 1 teaspoon
  • Red chili (shredded) - 1 piece
  • Cooking oil - 3 tablespoons 

 

      Method

  • Wash clams with running water for few times then soak clam in salt water for 1 hour. This is to remove the fine sand from the shells. Drain well and set aside.
  • Heat up 3 tablespoons of cooking oil in pan, add ginger, lemongrass, curry leaves, chopped onions and stir fried until fragrant.
  • Add chili paste, sugar, dark soy sauce then mix well. Add clams in and stir fry with high heat for 3 minutes until all shells open.
  • Add salt to taste and serve.
