Smoked Pomfret Recipe

Ingredients

  • pomfret - 600g
  • red tea leaves - 2 tbsp
  • brown sugar - 4 tbsp
  • onion - 2 tbsp, shredded
  • corn starch - ½ tsp
  • ginger juice - 1 tsp
  • carrot juice - 2 tbsp
  • wine - 1 tbsp
  • salt
  • sugar
  • pepper
  • sesame oil
  • salad dressing - 2 tbsp

Method

  • Wash and dry the fish, cut into diagonal thick slices.
  • Marinate with salt, sugar, pepper, sesame oil, ginger juice, carrot juice, corn starch, wine, onion for an hour.
  • Deep fry the fish over a medium heat. Set aside.
  • Cover the bottom of the wok with aluminum foil, sprinkle the red tea leaves and brown sugar on it.
  • Place a iron rack in the wok and put the fish pieces n the rack.
  • Cover and smoke over a medium heat for 5-6 minutes, brush some sesame oil on the fish and serve.
