Ingredients
- pomfret - 600g
- red tea leaves - 2 tbsp
- brown sugar - 4 tbsp
- onion - 2 tbsp, shredded
- corn starch - ½ tsp
- ginger juice - 1 tsp
- carrot juice - 2 tbsp
- wine - 1 tbsp
- salt
- sugar
- pepper
- sesame oil
- salad dressing - 2 tbsp
Method
- Wash and dry the fish, cut
into diagonal thick slices.
- Marinate with salt, sugar,
pepper, sesame oil, ginger juice, carrot juice, corn starch,
wine, onion for an hour.
- Deep fry the fish over a
medium heat. Set aside.
- Cover the bottom of the wok
with aluminum foil, sprinkle the red tea leaves and brown sugar
on it.
- Place a iron rack in the wok
and put the fish pieces n the rack.
- Cover and smoke over a medium
heat for 5-6 minutes, brush some sesame oil on the fish and
serve.
