Ingredients
- prawns - 75g, shelled
- green crab - 1
- Chinese parsley
- fresh straw mushrooms - 75g
- winter melon - 600g
- ginger - 2 slices
- wine - 2 tsp
- stock - 4 cups
- water - 2 tbsp
- water chestnut powder - 1 tbsp
- salt and sugar
Method
- Peel and diced the winter
melon. Wash the crab, chop up and steam until it cooked, then
pick out it flesh.
- Clean the prawns with salt and
pat dry. Add a pinch of salt, pepper and corn starch and mix
well.
- Wash the straw mushrooms,
halve and scald.
- Heat 2 tbsp oil and stir fry
the ginger, add wine.
- Pour in the stock and let it
boil. Then add in the winter melon and cook until tender.
- Add in the prawns and straw
mushroom. Simmer for a while then add in water chestnut powder,
salt, sugar, 2 tbsp water and the crab.
- Let it boil again then pour
the soup into the bowl, sprinkle with Chinese parsley and serve.
