Seafood and Winter Melon Recipe

Ingredients

  • prawns - 75g, shelled
  • green crab - 1
  • Chinese parsley
  • fresh straw mushrooms - 75g
  • winter melon - 600g
  • ginger - 2 slices
  • wine - 2 tsp
  • stock - 4 cups
  • water - 2 tbsp
  • water chestnut powder - 1 tbsp
  • salt and sugar

Method

  • Peel and diced the winter melon. Wash the crab, chop up and steam until it cooked, then pick out it flesh.
  • Clean the prawns with salt and pat dry. Add a pinch of salt, pepper and corn starch and mix well.
  • Wash the straw mushrooms, halve and scald.
  • Heat 2 tbsp oil and stir fry the ginger, add wine.
  • Pour in the stock and let it boil. Then add in the winter melon and cook until tender.
  • Add in the prawns and straw mushroom. Simmer for a while then add in water chestnut powder, salt, sugar, 2 tbsp water and the crab.
  • Let it boil again then pour the soup into the bowl, sprinkle with Chinese parsley and serve.
