The key factor to
prepare good seafood is that you must get really fresh stuffs from
the market; look for bright eyes and bright red gills with no fishy
smell for fish. Prawns should be intact with head attached to the
body and it must look shiny. Discard whatever shell fish or mussels
that did not open up after cooking to avoid food poisoning. Seafood
are usually easy to cook and need only very short cooking time. Try
not to over cooked seafood as this will spoil the natural flavor and
the texture of the seafood.
