Seafood with Mango Recipe

Ingredients

  • scallops - 113g
  • prawns - 150g, shelled
  • wine - 2 tsp
  • mangoes - 3
  • water - 1½ tbsp
  • salt and sugar
  • sesame oil
  • corn starch

Marinate for scallops

  • oil, wine, ginger juice, sesame oil, pinch of corn starch, salt, sugar and pepper

Marinate for prawns

  • pinch of salt, pepper, corn starch, and sesame oil.

Method

  • Wash the prawns, rinse the scallops and pat dry.
  • Marinate the seafood for 20 minutes and deep fry in warm oil.
  • Wash and cut the mangoes in half, core and diced it. Soak the mangoes in hot water until it soft.
  • Heat 1 tbsp oil and stir fry the ginger. Pour in the seafood and sizzle with wine.
  • Add in the corn starch, water, sesame oil, salt, sugar and then the mango flesh. Mix them well.
  • Place the mixture on a dish and serve.
