Ingredients
- scallops - 113g
- prawns - 150g, shelled
- wine - 2 tsp
- mangoes - 3
- water - 1½ tbsp
- salt and sugar
- sesame oil
- corn starch
Marinate for scallops
- oil, wine, ginger juice,
sesame oil, pinch of corn starch, salt, sugar and pepper
Marinate for prawns
- pinch of salt, pepper, corn
starch, and sesame oil.
Method
- Wash the prawns, rinse the
scallops and pat dry.
- Marinate the seafood for 20
minutes and deep fry in warm oil.
- Wash and cut the mangoes in
half, core and diced it. Soak the mangoes in hot water until it
soft.
- Heat 1 tbsp oil and stir fry
the ginger. Pour in the seafood and sizzle with wine.
- Add in the corn starch, water,
sesame oil, salt, sugar and then the mango flesh. Mix them well.
- Place the mixture on a dish
and serve.
