Ingredients
- fresh oysters - 300g
- wine - 2 tsp
- ginger - few slices
- carrot - few slices
- spring onion - 4 stalks
Seasoning
- light soy sauce - 1 tsp
- pepper, salt, sugar - to taste
- oyster sauce - 2 tsp
- sesame oil
Method
- Place the oysters in drainer,
add 2 tsp salt and 1 tbsp corn starch.
- Shake the drainer to remove
dirt, wash the oysters.
- Boil 4 cups of water, add in 2
slices of ginger and spring onion. Pour in the oysters and cook
until the edges of oyster open. Place on a dish, and dry it with
a towel.
- Slice the ginger, trim and cut
the spring onion.
- heat 3 tbsp oil and stir fry
the spring onion and ginger, add in the oysters and stir fry for
a while.
- Add in the wine, carrot and
seasoning. Mix well and serve.
