Oysters with Ginger and Spring Onion Recipe

Ingredients

  • fresh oysters - 300g
  • wine - 2 tsp
  • ginger - few slices
  • carrot - few slices
  • spring onion - 4 stalks

Seasoning

  • light soy sauce - 1 tsp
  • pepper, salt, sugar - to taste
  • oyster sauce - 2 tsp
  • sesame oil

Method

  • Place the oysters in drainer, add 2 tsp salt and 1 tbsp corn starch.
  • Shake the drainer to remove dirt, wash the oysters.
  • Boil 4 cups of water, add in 2 slices of ginger and spring onion. Pour in the oysters and cook until the edges of oyster open. Place on a dish, and dry it with a towel.
  • Slice the ginger, trim and cut the spring onion.
  • heat 3 tbsp oil and stir fry the spring onion and ginger, add in the oysters and stir fry for a while.
  • Add in the wine, carrot and seasoning. Mix well and serve.
