Fried Prawns with Scrambled Eggs Recipe

Ingredients

  • prawns - 225g, shelled
  • spring onion - 2 tbsp, diced
  • eggs - 6
  • wine - ½ tsp
  • cooked oil - 1 tbsp
  • pepper and salt

Method

  • Clean the prawns with salt and rinse under running tap for 15 minutes, then pat dry.
  • Mix with salt, pepper, and cooked oil, then chill in the fridge for an hour.
  • beat the eggs, add ½ tsp salt and 1 tbsp oil.
  • Heat 1 tbsp oil, and stir fry the prawns over a high heat, add in the wine.
  • Place the prawns into the beaten eggs, add the spring onion and mix well.
  • Heat 2 tbsp oil and pour in the eggs mixture into the wok. Spread the mixture with turner and fry until creamy. Serve.
