Ingredients
- prawns - 225g, shelled
- spring onion - 2 tbsp, diced
- eggs - 6
- wine - ½ tsp
- cooked oil - 1 tbsp
- pepper and salt
Method
- Clean the prawns with salt and
rinse under running tap for 15 minutes, then pat dry.
- Mix with salt, pepper, and
cooked oil, then chill in the fridge for an hour.
- beat the eggs, add ½ tsp salt
and 1 tbsp oil.
- Heat 1 tbsp oil, and stir fry
the prawns over a high heat, add in the wine.
- Place the prawns into the
beaten eggs, add the spring onion and mix well.
- Heat 2 tbsp oil and pour in
the eggs mixture into the wok. Spread the mixture with turner
and fry until creamy. Serve.
