Fried Prawns with Fish Sauce

Ingredients

  • prawns - 375g
  • grated garlic - ½ tsp
  • ginger - 1 slice
  • spring onions - 2 stalks (sectioned)
  • sugar - ¼ tsp
  • fish sauce - 1½ tbsp
  • diced spring onions - 1 tbsp
  • wine - 1 tsp

Method

  • Clean and trim the prawns, then pat dry.
  • Heat the 2 tbsp oil and stir-fry the prawns, ginger, and grated garlic over a high heat then turn down to medium heat.
  • Spread the prawns evenly in the wok and add spring onions sections and 1 tbsp oil.
  • Sprinkle the prawns with sugar, wine, and fish sauce, then cover and cook for 2 minutes.
  • Discard the spring onions and ginger, then add the diced spring onions and some sesame oil. Mix well and serve.
