Chicken give
a lighter flavor to that of red meat and it is easier to match with
other ingredients due
to it's milder taste and softer texture compare to beef and mutton.
Chicken is especially popular in our day to day menu because a whole
chicken can provide many choice of dishes, from breast meat to
chicken thigh and even the carcass and chicken feet can be use to
prepare a pot of delicious soup.
Comparatively, duck is
less popular because of it's stronger taste and you need a more
skilful cook to handle it. If do it the right way, duck meat
actually give a better flavor with the right combination of herbs
and spices.
