Ingredients

Pig trotter (cut into serving size) -
2 kilograms

Garlic - 8 cloves

Ginger (sliced) - 100 grams

Tomato sauce - 8 tablespoons

Dark soy sauce - 1 teaspoon

Cooking oil - 4 tablespoons

Salt - to taste

Water - 2 cups

Vinegar - 2 cups
-
Sugar - 2 cups

Cucumber (sliced) - 1 cup

Onions (quartered) - 1

Red chili (halved) - 3
Method

Parboil pig trotter for 5 minute
before cooking.

Heat 4 tablespoons of cooking in a
wok then sauté ginger and garlic to fragrant. Add pig trotter,
tomato sauce, 2 tablespoons of sugar, dark soy sauce and water,
stir to mix well and bring to a gentle boil.

Turn to low heat and simmer
trotter for about 1˝ hours until meat is soft then add vinegar,
sugar, cucumber, onions and red chili, mix well and dish up.
