Salted Vegetable Duck  Soup Recipe (Kiam Chai Ark)

Ingredients

  • Duck (cut into serving size) - 1 bird (about 2 kilograms)

  • Salted Vegetables - 600 grams

  • Pig trotter (cut into serving size) - 400 grams

  • Tomato (quartered) - 150 grams

  • Ginger (crushed) - 50 grams

  • Garlic - 5 cloves

  • Sour plum - 4 pieces

  • Onion - 1 piece

  • Nutmeg (crushed) - 1 piece

  • Peppercorn (crushed) - ½ teaspoon

  • Water - 4 liters

  • Sesame oil 1 teaspoon

  • Salt and sugar to taste

Method

  • Bring 4 liters of water to boil then add nutmeg, ginger, onion garlic and peppercorn and boil for a while until aromatic.

  • Add both duck and pig trotter then bring to a boil. Turn to low heat and continue to simmer for about 1 hour until meat become tender.

  • Add seasoning to taste and serve hot with rice. You can flavor with pepper poder if preffer soup to be more spicy.
