Pineapple Sambal Recipe

Ingredients

  • Pineapple (cubed) - 2 cups

  • Prawns (shelled) - 120 grams

  • Cooking oil - 3 tablespoons

  • Salt and sugar to taste

Spices (Blend or pound fine paste)

  • Red chili - 6 pieces

  • Candlenuts - 4 pieces

  • Lemongrass (chopped) - 2 stalks

  • Shallots - 10 pieces

  • Coconut milk - 1˝ cups

Method

  • Heat 3 tablespoons of cooking oil in a wok then sauté spice paste to fragrant.

  • Add prawns and stir fry for a while then add pineapples to mix well with the spices.

  • Add coconut milk and let it simmer until oil surface to the top of the dish. Season with taste and serve.
