Nyonya Stir-Fried Chicken Recipe

Ingredients

  • Chicken (cut into serving size) - 1.5 kilograms

  • Dark soy sauce - 1 tablespoon

  • Coriander powder - 4 tablespoons

  • Shallot  - 10 pieces

  • Fermented bean paste - 3 tablespoons

  • Water - ¼ cup

Sauce (mix well)

  • 10 shallots (blend with water and strain juice) -  ½ cup

  • Tamarind juice - ½ cup

  • Brown sugar - 1 tablespoon

  • Sugar - 2½ spoons

  • Salt to taste

Method

  • Heat 4 tablespoons of cooking oil in wok then sauté shallots and bean paste to fragrant. Add chicken, dark say sauce and coriander powder to mix well.

  • Add in sauce ingredients and bring to boil, simmer dish for 20 mintes until chicken is well cooked and gravy thicken.
