Nyonya Steam Fish Paste (Otak Otak)

Ingredients

  • Fish fillet (white fish, sliced) - 400 grams

  • Banana leaves - some

  • Daun kaduk - some

  • Lime leaves (shredded) - 4

  • Egg (beaten) - 5

  • Thick coconut milk - 120 ml

  • Cornstarch - 2 tablespoons

  • Sugar - 1 teaspoon

  • Salt to taste

Spices (Blend to paste)

  • Red chili - 8 Shallots - 15

  • Garlic - 8

  • Lemongrass - 2 stalks

  • Turmeric - 50 grams

  • Belachan  - 30 grams

  • Ginger - 30 grams

  • Coriander powder - 1 teaspoon

Method

  • Mix spices ingredients in beaten egg with coconut milk, cornstarch, sugar, lime leaves and salt.

  • Add fish into the mixture and mix well.

  • Cut banana leaf into 8" x 6" sheet. Put 1  piece of daun kaduk, 2 tablespoons of mixture and 2 slices of fish filet on to the banana leaf.

  • Wrap it up and seal with toothpicks in both ends. Put into a preheat steamer and steam for 10 minutes.
