Nyonya Fish Maw Soup Recipe (Hu Peow Th'ng)

Ingredients

  • Fish maw (soaked and sliced) - 200 grams

  • Chinese mushrooms (soaked and shredded) - 120 grams

  • Pig bones or chicken carcass - 300 grams

  • Sole fish (toasted) - 50 grams

  • Water - 4 liters

  • Glass noodle (soaked) -  ½ cup

  • Chinese lettuce (shredded) - 2 leaves

  • Garlic oil 1 tablespoon

Ingredients for meat ball

  • Prawns (minced) - 250 grams

  • Pork (minced) - 300 grams

  • Cornstarch - 1 tablespoon

  • Sesame oil - 1teaspoon

  • Pepper and salt to taste

Method

  • Mix well all ingredients for meat balls and make into small ball shape with a spoon.

  • Bring water to a boil in a deep sauce pan, add pig bones or chicken carcass, toasted sole fish and simmer for 1 hour. Add fish maw and mushrooms and simmer for another 10 minutes.

  • Add meat balls and seasoning to taste then boil for another 5 minutes. Garnish with glass noodles, garlic oil and Chinese lettuce when serve.
