Nyonya Mango Rice Recipe

Ingredients

  • Chicken fillet (cubed) - 200 grams

  • Dried prawns (soaked and drained)- 50 grams

  • Sambal belachan - 40 grams

  • Unripe mango (peeled and grated) - 200 grams

  • Cucumber (sliced) - 200 grams

  • Kaffir lime leaves - 4 pieces

  • Ginger flower (finely chopped) - 1 tablespoon

  • Small onions (sliced) - 10 pieces

  • Cooked rice (cooled) - 700 grams

  • 1¼-1½ teaspoons salt

  • Cooking oil - 6 tablespoons

  • Sugar, salt and pepper to taste

  • Red chilies (shredded) - 2pieces

Method

  • Season chicken cubes with sugar, salt and pepper for about 10 minutes and stir fry in medium heat oil until golden brown then set aside.

  • Sauté dried prawns in remaining oil until fragrant, drain and set aside.

  • Mix chicken cubes and dried prawns in a large bowl with cooked rice, ginger flower and stir well.

  • Transfer to serving dish and top with cucumber, mango and sambla belacan, garnish with shredded small onions and red chilies and serve.
