Holland Fish Recipe (Ikan Belanda)

Ingredients

  • Fish fillet (your choice)- 400 grams

  • Cinnamon stick - 1

  • Garlic (sliced) - 8

  • Shallot (sliced) - 10

  • Tamarind juice - 4 tablespoons

  • Red chili (shredded) - 2

  • Cooking oil - 4 tablespoons

  • Sugar - 2 tablespoons

  • Salt to taste

Method

  • Heat 4 tablespoons of cooking oil in wok, stir fry to brown both shallots and garlic separately. Drain both and set aside.

  • Add fish fillet in the remaining oil, fry gently until fish turn golden brown. Drain well and set aside.

  • Stir in cinnamon stick and chili, sauté to fragrant, then add tamarind juice, sugar, salt, half of the fried shallots and garlic. Simmer for 2 minutes to gentle boil.

  • Return fried fish into the dish and simmer for another 3 minutes. Garnish with remaining fried shallots and garlic when serve.
