Ingredients

Fish fillet (your choice)- 400 grams

Cinnamon stick - 1

Garlic (sliced) - 8

Shallot (sliced) - 10

Tamarind juice - 4 tablespoons

Red chili (shredded) - 2

Cooking oil - 4 tablespoons

Sugar - 2 tablespoons

Salt to taste
Method

Heat 4 tablespoons of cooking oil
in wok, stir fry to brown both shallots and garlic separately.
Drain both and set aside.

Add fish fillet in the remaining
oil, fry gently until fish turn golden brown. Drain well and set
aside.

Stir in cinnamon stick and chili,
sauté to fragrant, then add tamarind juice, sugar, salt, half of
the fried shallots and garlic. Simmer for 2 minutes to gentle
boil.

Return fried fish into the dish
and simmer for another 3 minutes. Garnish with remaining fried
shallots and garlic when serve.
