Fried prawns With Chili paste

Ingredients

  • Prawns (large, unshelled) - 800 grams

  • Sugar and salt to taste

  • Water - 130 ml

  • Cooking oil - 3 tablespoons

Chili paste (ground or blended)

  • Red chili - 12 pieces

  • Small chili (chili padi) - 4 pieces

  • Garlic - 3 cloves

  • Small onions (peeled) - 20 pieces

  • Candlenuts - 60 grams

Method

  • Season prawns with litter bit of sugar and salt then pan fry in warm oil for 1 minute, dish up and set aside.

  • Add chili paste into the pan with remaining oil, sauté chili paste to fragrant, then return prawns and stir fry to mix well.

  • Add water and simmer until prawns are well cooked and gravy slightly reduced, season with sugar and salt and serve.
