Fish In Special Sauce (Hu Lam Shuin)

Ingredients

  • Fish (any choice) - 400 grams

  • Tomato sauce - 5 tablespoons

  • White vinegar - 1tablespoon

  • Sugar - 2 tablespoons

  • Sesame oil - 1 teaspoon

  • Water - 200 ml

  • Cooking oil for deep frying

  • Cucumber and tomato (sliced) for garnishing

Ingredients blended or pounded coarsely

  • Red chili - 2

  • Garlic - 5 cloves

  • Ginger - 20 grams

Method

  • Heat oil in wok and deep fry fish until golden brown in color. Drain well and arrange on a serving plate.

  • Leave 4 tablespoons of cooking oil in the wok, sauté blended chili paste mixture to fragrant.

  • Add tomato sauce, vinegar, water and seasoning and simmer to gentle boil.

  • Spread sauce over deep fried fish and garnish with cucumber and tomato slices.
