Fish (any choice) - 600 grams

Ginger (shredded) - 20 grams

Garlic (minced) - 3 cloves

Fermented bean paste - 1 tablespoon

Water - ˝ cup

Cornstarch - 1

Dark say sauce - ˝ teaspoon

Light soy sauce - 1 tablespoon

Red chili (shredded) - 1

Sugar - 1 teaspoon

Spring onions (sectioned) -1 stalk

Cooking oil for deep frying
Method

Heat cooking oil in wok then deep
fry fish to golden brown, drain well and arrange on a serving
plate.

Leave about 3 tablespoon of
cooking oil in wok, sauté ginger, garlic and bean paste to
fragrant then add chili and seasoning. Mix water with cornstarch
then stir in and thicken the sauce.

Spread sauce over deep-fried fish
and serve.
