Fish In Bean Paste Recipe (Tau Cheo Hu)

Ingredients

  • Fish (any choice) - 600 grams

  • Ginger (shredded) - 20 grams

  • Garlic (minced) - 3 cloves

  • Fermented bean paste - 1 tablespoon

  • Water - ˝ cup

  • Cornstarch - 1 teaspoon

  • Dark say sauce - ˝ teaspoon

  • Light soy sauce - 1 tablespoon

  • Red chili (shredded) - 1

  • Sugar - 1 teaspoon

  • Spring onions (sectioned) -1 stalk

  • Cooking oil for deep frying

Method

  • Heat cooking oil in wok then deep fry fish to golden brown, drain well and arrange on a serving plate.

  • Leave about 3 tablespoon of cooking oil in wok, sauté ginger, garlic and bean paste to fragrant then add chili and seasoning. Mix water with cornstarch then stir in and thicken the sauce.

  • Spread sauce over deep-fried fish and serve.
