Sliced Raw Salmon Recipe

Ingredients

  • Fresh salmon fillets ( skinned and remove all bones) - 2 pieces (about 200grams/15oz)

For the garnish

  • mooli ( daikon radish )
  • Wasabi paste
  • Shiso leaf
  • Soy sauce to serve

Method

  • Frozen the salmon fillets for 10 minutes to make them easier to cut.
  • Lay the skinned side up and thick portion on your side and away from you.
  • Use a long sharp knife and tilt it to the left. Slice carefully towards you, starting the cut from the point of knife, pull the knife from far towards you.
  • Finely shred the mooli, place in a bowl of cold water and leave for 5 minutes, the drainwell.
  • Arrange the sliced fillets on a plate with 2 slices over 3 slices of fillets diagonally to look better.
  • Garnish with mooli, wasabi and shiso leaf
  • Serves 4.
