This is a dish which can made from
various ingredients. Canned pink salmon is used here for a very
delicate flavor. Fried bean curd can be used instead of salmon.
Ingredients
- pink salmon - 1 x 400g/14 oz
can, drained, bones and skin removed
- eggs -4, size 4, beaten
- large mild onions - 2, sliced
- mange touts - 10, trimmed
- soy sauce - 2 tbsp
- sugar - 8 tsp
Method
- Flake the salmon. Boil the mange
touts for 2-3 minutes, then drain and slice.
- Place the onions in a frying
pan, then add 200ml/7fl oz/1 cup water and boil it. Cook for 5
minutes over a moderate heat, then add the soy sauce and sugar.
Cook for another 5 minutes.
- Add the salmon and cook for 2-3
minutes until the soup evaporated.
- Then pour the egg over to cover
the surface.
- Sprinkle in the mange touts and
cover the pan. cook for a minute over a moderate heat until just
set. (do not overcook)
- Spoon into a dish and serve
immediately. Serves4.
