This dish is a perfect starter for
entertaining as it can be made easily; however, the whole dish must
be made just before serving to prevent the avocado from discoloring
and to preserve the flavor of the wasabi, which will be lost.
Ingredients
- king prawns - 200g/7 oz, shelled
and head removed
- avocado - 2, halved, stoned and
skinned
For the wasabi dressing
- wasabi paste - 2 tsp
- usukuchi soy sauce - 4 tsp
- rice vinegar - 2 tbsp
Method
- First, make the wasabi. Mix the
ingredients for the wasabi dressing.
- Then cut avocado into cubes.
- Preparing the prawns, remove the
black intestinal vein. Cook them in salted simmering water for a
minute until they turn orange. Cut into pieces.
- Place the avocado and prawns in
a bowl, toss well together with the dressing. Serves 4.
