Prawn and Avocado with Wasabi Recipe

This dish is a perfect starter for entertaining as it can be made easily; however, the whole dish must be made just before serving to prevent the avocado from discoloring and to preserve the flavor of the wasabi, which will be lost.

Ingredients

  • king prawns - 200g/7 oz, shelled and head removed
  • avocado - 2, halved, stoned and skinned

For the wasabi dressing

  • wasabi paste - 2 tsp
  • usukuchi soy sauce - 4 tsp
  • rice vinegar - 2 tbsp

Method

  • First, make the wasabi. Mix the ingredients for the wasabi dressing.
  • Then cut avocado into cubes.
  • Preparing the prawns, remove the black intestinal vein. Cook them in salted simmering water for a minute until they turn orange. Cut into pieces.
  • Place the avocado and prawns in a bowl, toss well together with the dressing. Serves 4.
