Japanese-style Hamburgers Recipe

This recipe makes soft and moist hamburgers that are delicious with rice.

Ingredients

  • minced beef - 500g/1¼ lb
  • small onion - 1, chopped
  • mooli (daikon radish) - 200g/7 oz, grated and drained in a sieve
  • white breadcrumbs - 50g/2 oz/1 cup
  • shiso leaves - 4, shredded
  • oil - 2 tbsp
  • soy sauce - 30ml/1½ tsp
  • shiitake mushrooms - 115g/4 oz, stems discard and diced
  • egg - 1
  • black pepper
  • salt - 1 tsp

Method

  • Heat 1 tbsp oil in a pan and fry the onion until soft and leave it cool.
  • Place the minced beef in a bowl with the fried onion, egg and breadcrumbs.
  • Season with the pepper and salt and knead well until the ingredients are combined and the mixture become sticky. Divide the meat mixture into 4.
  • Put a little oil on hand and shape the mixture into burger. Continue with the remaining mixture.
  • Heat the oil in a pan and fry the burger over a high heat until it browned on both sides.
  • Put the shiitake mushrooms in the pan and cook over a low heat together with the burger for 3-4 minutes.
  • Serve the burgers topped with the shiitake mushrooms, shiso leaves and mooli. Pour 1½ tsp soy sauce over the burger before serving. Serves 4.
