Grilled Tuna Kebabs

Choose a fatty portion of tuna steak. This oily, pinkish part of tuna is better for grilling and has a good texture.

Ingredients

  • tuna steak - 200g/7 oz
  • lime - 1, quartered
  • spring onions

For the marinate

  • soy sauce - 3 tbsp
  • mirin - 2 tsp

Method

  • Cut the tuna into 24 cubes. Mix the soy sauce and mirin. then pour it over the tuna and leave to marinate for 30 minutes.
  • Cut the spring onions into length (1 inch).
  • Thread the tuna and the spring onions alternately on to 8 bamboo skewers.
  • Preheat the grill to the hottest setting and grill the tuna. Turn the tuna frequently to prevent the tuna burning.
  • Brush the tuna with the marinate several time. Grill until the tuna is lightly cooked but still moist inside.
  • Serve the kebabs immediately with lime wedges. Serves 4.
