Fried Pork in Ginger Marinate

Ginger is a popular spice in Japanese cooking. Plain cooked rice complements this recipe very well.

Ingredients

  • pork loin - 400g/14 oz, cut into slices
  • oil - 1½ tsp
  • tomatoes - 2
  • punnet of cress
  • mixed salad leaves

For the marinate

  • sake or dry white wine - 1 tbsp
  • fresh root ginger - 20g/¾ oz
  • soy sauce - 4 tbsp

Method

  • Prepare the marinate, grated the ginger to get 1 tsp ginger juice. Mix the soy sauce and sake.
  • Place the pork slices in a shallow dish and pour the marinate. Coat them well. Set aside for 15 minutes.
  • Meanwhile, cut the tomatoes in to wedges.
  • Cut the cress off its roots, wash and drain it. Chill the prepared ingredients and salad leaves.
  • Heat the oil, place the pork in a single layer on the pan and pour the marinate.
  • Fry over a medium heat until the pork turn golden on both sides.
  • Arrange the pork on a plate with tomatoes, salad and cress. Pour the cooking juice from the pan over the pork. Serve immediately. Serves 4.
