Ingredients
- minced beef - 115g/4 oz
- spinach - 225g/8 oz, rinse and
shredded
- tomato - 1 large, chopped
- fresh chilies - 1-2, seeded and
chopped
- cube terasi - 1cm/½ in
- baby sweetcorn - 8, sliced (you
can also use canned sweetcorn - 200g/7 oz
- onion - 1 large, grated
- dried shrimps - 50g/2 oz, soak
in warm water for 10 minutes
- brown sugar - 5ml/1 tsp
- garlic - 1 cloves, crushed
- groundnut oil - 30ml/2 tbsp
- carrot - 1, grated
- chicken stock - 1 liter/1¾
pints/4 cups
- macadamia nuts - 3 or almond -
6, ground
- salt
- lemon juice - ½ lemon
Method
- Heat the oil, then add the
onion, garlic and beef and cook, until the meat changes color.
- Add the carrot, sugar, nuts,
terasi, chilies, and salt to taste.
- Add the stock and bring to boil.
Reduce the heat to a simmer and then add the soaked shrimps
including the soaking liquid, and simmer for 10 minutes.
- A before serving, add some
tomato, spinach, sweetcorn, and lemon juice then simmer for 1-2
minutes.
- Do not overcook the vegetables
because it will spoil the appearance and taste. Serves 6.
