Squid From Madura

This squid dish, cumi cumi Madora, is a popular dish in Indonesia. You will be most welcome to order this dish to treat your friends or family.

Ingredients

  • Squid (cleaned and drained, ct into strips) - 450 grams/ 1 lb
  • Garlic - 3 cloves
  • Ground nutmeg -1.5ml/ ¼ teaspoon
  • Spring Onions - 1 bunch
  • Cooking oil - 60 ml/ 4 tablespoons
  • Water - 250 ml
  • Dark soy sauce - 15 ml/ 1 tablespoon
  • Salt and black pepper - to taste
  • lime (sliced) - 1 piece
  • Rice to serve

Method

  • Heat up oil and stir-fry squid for 1 minute and set aside.
  • Mix crush garlic with nutmeg, salt and pepper. Trip spring onions into 1 inch length then set aside.
  • Heat  up more oil and add spring onions, garlic paste and the squid and mix well in the pan.
  • Add water, soy sauce and stir-fry for 1 minute and simmer for another 2 minutes.
  • Add the spring onions top and lime, toss lightly and serve with rice when dish is warm.
  • Serve 3
