- 1 Red Snapper - about 500

- Banana leaves or foil

- red small chili - 10 pieces
- Shallot - 5 pieces
- Garlic - 3 cloves
- Candlenuts (buah keras) - 5
pieces
- Lengkuas -5 slices
- Turmeric root (kunyit) - ½

- Tomato - 1 pieces
- Brown sugar and salt to taste
Method
- Clean fish, coat the pounded
ingredients thoroughly over the the fish and wrap in banana
leaves or foil. Use strong
toothpicks to secure if using banana leaves.
- Steam fish in a steamer for 20
minutes or barbecue over charcoal until cooked.
