Spicy Steam Fish recipe (Pepes Ikan Bumbu Rujak)

Ingredients

  • 1 Red Snapper - about 500 grams
  • Banana leaves or foil

Ingredients to be pound

  • red small chili - 10 pieces
  • Shallot - 5 pieces
  • Garlic - 3 cloves
  • Candlenuts (buah keras) - 5 pieces
  • Lengkuas -5 slices
  • Turmeric root (kunyit) - ½ piece
  • Tomato - 1 pieces
  • Brown sugar and salt to taste

Method

  • Clean fish, coat the pounded ingredients thoroughly over the the fish and wrap in banana leaves or       foil. Use strong toothpicks to secure if using banana leaves.
  • Steam fish in a steamer for 20 minutes or barbecue over charcoal until cooked.
  • Large squid can also be prepare this way.
