Peanut fritters is also known as
Rempeyak Kacang in Indonesia. It is better to use rice flour
because of it's grainy texture. It is easy to prepare and goes well
with Festive Rice and make a good addition to buffet.
Ingredients
- Rice flour - 50 grams
- Baking powder - 2.5 ml
- Garlic (crushed) - 1 clove
- Ground coriander - ½ teaspoon
- Ground cumin - ¼ teaspoon
- Ground turmeric - ½ teaspoon
- Peanuts (crushed finely) - 50
grams
- water and coconut milk mixture
- 150 ml
- Cooking oil - 3 tablespoons
- Salt to taste
- Coriander leaves - few pieces
Method
- Mix rice flour, baking powder
and salt in a big bowl. Add garlic, coriander, cumin, turmeric,
and peanuts
- and stir well with coconut
solution until batter is smooth.
- Heat coking oil in frying pan
and scoop spoonful of batter into heated oil. Pan fry several
fritters at a time until both sides golden brown and crispy.
- Dish out and drain well. Serve
immediately or keep in air tight container for further use.
- Salted peanuts can also be use
but remember to adjust seasoning.
