Prawns with Chayote in Turmeric Sauce

This is a very delicious and attractive colored dish which is also call Gule Udang Dengan Labu Kuning.

Ingredients

  • Chayote or Courgette - 2 or 3 pieces
  • Fresh red chili (seeded) - 2 pieces
  • Onion - 1 piece
  • Fresh lengkuas (peeled) - 1/4 inch
  • Lemon grass stem (sliced) - 1 pieces
  • Fresh turmeric (peeled) - 1 inch
  • water - 200ml
  • Lemon juice - 1 tablespoon
  • Coconut milk - 400ml
  • Prawns (peeled) - 450 grams
  • Red chili shreds to garnish
  • Cook rice to serve

Method

  • Peel chayotes, remove seeds and cut into strips. Same for using courgettes.
  • Use blender or food processor to grind the fresh red chili, onion, sliced lemon grass stem, sliced lengkuas and fresh turmeric into paste. Pestle and mortar can also be used.
  • Add water to the paste mixture and squeeze lemon juice in. Add salt to taste.
  • Boil the mixture in a pan for 1 minute and add chayote or courgette and cook for 2 minutes.
  • Add coconut milk and stir well.
  • Taste and adjust seasoning.
  • Add prawns and cook gently for 3 minutes then garnish with shreds of chili.
  • serves with rice for 4.
