This is a very delicious and
attractive colored dish which is also call Gule Udang Dengan Labu
Kuning.
Ingredients
- Chayote or Courgette - 2 or 3
pieces
- Fresh red chili (seeded) - 2
pieces
- Onion - 1 piece
- Fresh lengkuas (peeled) - 1/4
inch
- Lemon grass stem (sliced) - 1
pieces
- Fresh turmeric (peeled) - 1
inch
- water - 200ml
- Lemon juice - 1 tablespoon
- Coconut milk - 400ml
- Prawns (peeled) - 450 grams
- Red chili shreds to garnish
- Cook rice to serve
Method
- Peel chayotes, remove seeds
and cut into strips. Same for using courgettes.
- Use blender or food processor
to grind the fresh red chili, onion, sliced lemon grass stem,
sliced lengkuas and fresh turmeric into paste. Pestle and mortar
can also be used.
- Add water to the paste mixture
and squeeze lemon juice in. Add salt to taste.
- Boil the mixture in a pan for
1 minute and add chayote or courgette and cook for 2 minutes.
- Add coconut milk and stir
well.
- Taste and adjust seasoning.
- Add prawns and cook gently for
3 minutes then garnish with shreds of chili.
- serves with rice for 4.
