Tomato and Onion Chutney

Chutneys are served with most meat dishes in Indian cuisine.

Ingredients

  • medium onion - 1, chopped
  • tomatoes - 8
  • malt vinegar - 175ml/6fl oz/¾ cup
  • clear honey - 1 tbsp
  • garam masala - 1 tsp
  • salt - 1 tsp
  • brown sugar - 3 tbsp
  • ginger powder - 1 tsp
  • sliced green chilies, natural low fat yogurt and fresh mint leaves

Method

  • Clean the tomatoes and cut them into quarters.
  • Put the tomatoes with the onion in a saucepan.
  • Add the honey, garam masala, salt, sugar, vinegar and ginger, then half-cover the pan with lid and cook over a low heat for 20 minutes.
  • Mash the tomatoes, then continue to cook on a slightly higher heat until the chutney thickens.
  • serve chilled, garnish with sliced chili, yogurt and mint leaves.
