Sweet and sour Raita Recipe

Raitas are traditionally served with most Indian meals as accompaniments which are cooling to the palate. They also go particularly well with briyani.

Ingredients

  • fresh coriander - 30ml/3 tbsp, chopped
  • medium onion - 1, diced
  • green chili - 1, seeded and chopped
  • natural low fat yogurt - 475ml/16fl oz/2 cups
  • mint sauce - 7.5ml/1½ tsp
  • water - 50ml/2fl oz/¼ cup
  • honey - 30ml/2 tbsp
  • salt - 5ml/1 tsp
  • sugar - 5ml/1 tsp

Method

  • Pour the yogurt into a bowl and whisk it well. Add the honey, mint sauce, sugar and salt.
  • Taste to check the sweetness and add more honey if you prefer it sweeter.
  • Reserve some chopped coriander for garnish, add the rest to the yogurt mixture, with water, chili, and onion.
  • Whisk once again and pour into a serving bowl. Garnish with coriander. Put in the fridge until they ready to serve
