Raitas are traditionally served
with most Indian meals as accompaniments which are cooling to the
palate. They also go particularly well with briyani.
Ingredients
- fresh coriander - 30ml/3 tbsp,
chopped
- medium onion - 1, diced
- green chili - 1, seeded and
chopped
- natural low fat yogurt -
475ml/16fl oz/2 cups
- mint sauce - 7.5ml/1½ tsp
- water - 50ml/2fl oz/¼ cup
- honey - 30ml/2 tbsp
- salt - 5ml/1 tsp
- sugar - 5ml/1 tsp
Method
- Pour the yogurt into a bowl and
whisk it well. Add the honey, mint sauce, sugar and salt.
- Taste to check the sweetness and
add more honey if you prefer it sweeter.
- Reserve some chopped coriander
for garnish, add the rest to the yogurt mixture, with water,
chili, and onion.
- Whisk once again and pour into a
serving bowl. Garnish with coriander. Put in the fridge until they
ready to serve
