Round brinjal (small) - 300

Onions (chopped) - 5 pieces

Cumin seeds (roasted) - ¼

Mango powder - ¼ teaspoon

Chili powder - 1 teaspoon

Garam masala - 1 teaspoon

Yoghurt - 5 tablespoons

Coriander leaves (chopped) - 1
tablespoon

Cooking oil - 2 tablespoons

Mix
spices

Mango powder - 1 teaspoon

Chili powder - 1 teaspoon

Cumin powder - ½ teaspoon

Garam masala - 1 teaspoon

Salt - ½ teaspoon

Cooking oil - 2 teaspoons
Method

Mix mango, cumin and chili powder,
garam masala and salt in a bowl. Cut brinjal into 4 sections
then rub mix spices inside of the brinjals. Heat oil in pan then
pan-fry the brinjals until brown and set aside.

Heat oil again and stir-fry cumin
for a while then add chopped onions and stir-fry until soft and
brown.

Add tomato, ginger, green chili,
chili powder, mango powder, garam masala and mix well. Add salt
to taste.

Turn to low heat and add little
amount of water. Add yoghurt in and mix the dish well.

Add brinjals in, stir gently to
mix well and dish up. Garnish with chopped coriander leaves and
serve.
