Pea and Mushroom Pilau

It is best to use button mushrooms and petits pois for this delectable rice dish as they make the pilau look truly attractive and appetizing.

Ingredients

  • button mushrooms - 50g/2 oz
  • water - 750ml/1¼ pints/3 cups
  • petits pois (pea) - 75g/3 oz
  • medium tomato - 1,sliced
  • oil - 1 tbsp
  • salt - 1 tsp
  • cumin seeds - ½ tsp
  • cinnamon sticks - 2
  • black cardamom pods - 2
  • garlic - 3 cloves, sliced
  • basmati rice - 450g/1 lb/2¼ cups

Method

  • Heat the oil in a medium heavy-based saucepan and add the salt spices and garlic.
  • Add the mushrooms and tomato, then stir-fry for 2-3 minutes.
  • Drain the rice and add to the pan with petits pois. Stir gently, and make sure you don't break up the grains of rice.
  • Then, add the water and let it boil. Lower the heat and cover. Continue to cook for 15-20 minutes.
