It is best to use button mushrooms
and petits pois for this delectable rice dish as they make the pilau
look truly attractive and appetizing.
Ingredients
- button mushrooms - 50g/2 oz
- water - 750ml/1¼ pints/3 cups
- petits pois (pea) - 75g/3 oz
- medium tomato - 1,sliced
- oil - 1 tbsp
- salt - 1 tsp
- cumin seeds - ½ tsp
- cinnamon sticks - 2
- black cardamom pods - 2
- garlic - 3 cloves, sliced
- basmati rice - 450g/1 lb/2¼ cups
Method
- Heat the oil in a medium
heavy-based saucepan and add the salt spices and garlic.
- Add the mushrooms and tomato,
then stir-fry for 2-3 minutes.
- Drain the rice and add to the
pan with petits pois. Stir gently, and make sure you don't break
up the grains of rice.
- Then, add the water and let it
boil. Lower the heat and cover. Continue to cook for 15-20
minutes.
