Kurma Curry Recipe (Meat or Chicken curry)

Ingredients

 

Meat/Chicken -500 grams

Meat Curry powder - 60 grams

Thick coconut milk - 1 cup

Thin coconut milk - 2 cups

Mint leaves - few pieces

Water - 1 cup

Cooking oil -  3 tablespoons

Salt to taste

 

Seasoning A (spices to grind)

 

Shallots - 7 pieces

Garlic - 4 cloves

Ginger knob - 3 inches

Green chilies - 3 pieces

cashew nuts - 1 tablespoon

Blanched almonds - 5 pieces

 

Seasoning B

 

Star anise - 2 pieces

Cardamoms - 4 pieces

Cinnamon sticks - 1 piece

Cloves - 3 pieces

Onion (sliced) - 2 pieces

 

Method

 

Heal oil in pan, sauté seasoning B till slightly golden brown.

Put meat /chicken, salt and water, stir fry for 15 minutes.

Add grinded seasoning A and curry powder then toss in thin coconut milk, bring to boil and then toss in the thick coconut milk.

Simmer over low heat until the gravy is thicken then add mint leaves and serve.

  • If required thin gravy, add 2 cups of water.

Note: Meat curry powder or kurma curry powder in packet can be obtained from provision shops.
